Four paragraphs. One: the specific thing of theirs you have read and what you thought. Two: the closest thing you have done. Three: the gap, named honestly, and how you are closing it. Four: one sentence asking for the conversation. Paragraph three is the one people leave out and it is the one that makes the rest believable.

They can already see the gap on your CV. Naming it first means you get to frame it, and it reads as self-awareness rather than as something you hoped nobody would notice.
